Contact the Senior Citizen Center cooks at 378-2405.

Most all lunches include an entrée, potato, vegetable, salad, dessert and coffee along with fresh bread and all cost $5.00 each unless otherwise noted.

Lunches for the coming week are as follows:

Wednesday, September 20 pizza with a green salad and dessert

Thursday, September 21 chicken chow mein with dessert and bread for the Lunch of the Week!

Friday, September 22 hamburger stew, cornbread and dessert

Monday, September 25 parmesan chicken, noodles, salad and dessert

Tuesday, September 26 taco in a shell along with dessert

This week the cooks came up with a delicious and easy recipe for peanut butter pie.

For the crust buy one nine inch graham cracker pie crust

For the pie filling use

2 8oz package softened cream cheese

1 cup creamy peanut butter

1 cup powdered sugar

1 8oz container whipped topping, thawed

For the peanut butter crumbs on the top of the pie

2 tablespoons powdered sugar

1 tablespoon peanut butter

Directions:

In a medium bowl beat the cream cheese and the peanut butter until well blended and smooth. Add the powdered sugar and beat until well blended. Gently fold in 1 ½ cups of the whipped topping just until combined.

Pour into the crust and spread evenly. Spread the remaining whipped topping over the top. Sprinkle with the peanut butter crumbs.

Chill for a minimum of an hour or overnight.

For the peanut butter crumbs on the top, in a small bowl using a fork cut the peanut butter into the powdered sugar until crumbs are formed.
