This week Donna Jenkins shared a recipe for a Mexican chicken enchilada casserole

You will need

1 small onion, chopped

1 can mushroom soup

1 can chicken soup

1 cup chicken broth

1 pound longhorn or cheddar cheese

½ can green chili peppers, chopped

1 package corn tortillas, uncooked

1 2/3 pounds cooked chicken, diced

Brown onions, add soups, chili peppers and broth and blend well. Place layers of torn tortillas, chopped chicken, soup mixture and grated cheese in a greased baking dish. Repeat layers until all the ingredients are used. Bake 30 minutes at 325. Makes 6 to 8 servings.
