Don’t forget to order your harvest meals early in the morning you will need the meals. Ordering the day before is fine too.

Senior Citizen meals consist of an entrée, vegetable, potato, salad, dessert and drink and cost $5.00 each unless otherwise noted.

Menus for the coming week are as follows:

Wednesday, July 18 meatloaf, mashed potatoes with gravy, vegetables, salad, bread and dessert for the Lunch of the Week! Meatloaf wins hands down every time!

Thursday, July 19 soup, tuna fish sandwiches, chips and dessert.

Friday, July 21 Breakfast for lunch including waffles, scrambled eggs, bacon and fruit.

Monday, July 24 taco salad in a tortilla shell and dessert.

Tuesday, July 25 roast pork, mashed potatoes, gravy, vegetables, salad and dessert for yet another Lunch of the Week! Way to go cooks!

This week the Senior Citizen Cooks are recommending Rhubarb Berry Coffee Cake.

Here is what you will need.

1 package yellow cake mix of regular size divided

½ cup packed brown sugar

2/3 cup chopped walnuts

1 cup or 8 ounces of sour cream

2 large eggs

¼ cup all purpose flour

1 ½ cups finely chopped fresh or frozen rhubarb

1 ½ cups fresh strawberries

Cream cheese frosting or vanilla ice cream optional

Here is what you do.

In a small bowl combine ½ cup cake mix and sugar. Cut in butter until crumbly then add walnuts and set aside

In another bowl combine the sour cream. eggs, flour and remaining cake mix. Beat on low speed for 30 seconds. Beat on medium for 2 minutes. Fold in rhubarb and strawberries and spread into a greased 13 by 9 baking dish. Sprinkle with reserved crumb mixture.

Bake at 350 for 35 to 40 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.

If desired drizzle with frosting or serve with ice cream. Serves 12 to 15 servings.
